This signature Key West Shrimp dish from our award-winning chefs has been on top of everyone’s list as of late and we wanted to share this fun and easy recipe with you!
Grilled Key West Shrimp with Mango and Tomato Salad
For the Marinade:
4 fresh Key West Pink Shrimp
1 tbsp Salt
¼ cup orange juice
¼ teaspoon cayenne
For the Salad
1 quart of Mesculan Mix
1 Mango sliced
1 tablespoon sugar
¼ cup shaved fresh hearts of palm ( you can use canned but they are not as good )
Roma tomatoes chopped
Florida Avacado split and grilled
For the Dressing:
1 quart of orange juice reduced to ¼ cup
2 tbsp honey
1 tsp salt
1 tsp Dijon
1 shallot minced
¾ cup extra virgin olive oil
- For the dressing, reduce the orange juice to ¼ cup and pour in a mixing bowl. Add the Dijon, honey, salt, and minced shallot. Whisk in the olive oil.
- For the salad, cut the mango into slices and sprinkle with sugar. If possible torch the mango lightly to caramelize. Split the avocado, remove the seed and spray with pan spray and grill until charred. Toss the lettuce with the dressing, the chopped avocado, shaved hearts of palm, caramelized mango, and tomato.
- For the Shrimp, whisk together the orange juice, cayenne, and salt. Pour over the shrimp and marinate for 3 hours. Remove from the marinade and grill on a very hot grill until they are no longer translucent. Place on top of the salad and serve immediately.

Celebrate your friendships, successes or just the delight of life at Harbour Ridge by dining in style. The Riverview Dining Room and Eagle’s Nest Lounge are formal dining options available at Harbour Ridge, and boast breathtaking views from all seating points.
The elegant Riverview Dining Room hosts the Club’s gala affairs, and seating can be adjusted for large private parties. Special functions are hosted here, along with the Chef’s famous themed buffets. A variety of dining areas are available to suit your mood, from terrace dining to the Captain’s Table with its own fireplace and bar.
Being one with nature is what Harbour Ridge is all about. That’s why one of the favorite pub venues among members is the Dockside Pavilion, donated to Harbour Ridge by the Yacht Club. It’s the perfect gathering place for family and friends to enjoy live music and cocktails while watching the beautiful sunset colors reflect on the estuary waters.
The Dockside Pavilion hosts a la carte dining as well special monthly events, including “Docktails”, weddings and member private parties. This venue allows the members to enjoy the waterfront, while the Dockside’s proximity to the clubhouse creates a natural flow between the indoor and outdoor entertainment and dining areas.
